If you want piano players, here are some that come to mind Bud Powell, Art Tatum, Thelonious Monk, Bill Evans, Keith Jarrett, McCoy Tyner, Horace Silver, Abdullah Ibrahim. If you are into old school but just as excellent Jelly Roll Morton, Fats Waller, Earl Hines, James P. Johnson.
As has been mentioned Cecil Taylor is in the avant/free category but if you are interested in that I would also add Misha Mengelberg, Keith Tippett, Paul Bley, Sun Ra, Fred Van Hove, Marilyn Crispell, Irene Schweizer, Alexander Schlippenbach, Howard Riley, John Law.
