Samuel Barber: Nocturne [simply because that's the only song I know by him]
Scriabin: the Poem
I don't think those count as classical music.
Chopin: ...God, this is tough. I'm in love with his Heroice Polonaise, but I spent too much time trying to play that to no avail. His Militaire Polonaise is equally marvelous, but all of his Nocturnes are high on my list.
Beethoven: Sonata 17 in D Minor
Robby- I loved all the "Planets". Mercury and Jupiter were my favorites.
Rachmaninov second piano concerto is only piece I can single out like that... All my other favorite composers wrote tons of stuff I really like, but this one is the only fav that wrtote something I clearly favor over his other compositions...
debussy: l'apres midi d'un faune
rachmaninov: rhapsody on a theme of paganini, variation 18 (i think)
ravel: sonatine
beethoven: sonata no 8 'pathetique'
...these days I've been listening to various piano pieces by Federico Mompou a lot... he wrote quite a few wonderful little pieces... most very quiet and contemplative... If you like Satie or Poulenc you'll probably like much of Mompou as well...
