This may be a little too much on the Pop side, but the Mamas and the papas seem to fit into the Folk Rock sound as well. I was thinking Peter Paul and Mary but I'm don't ever really recall them getting into the rock part of folk-rock. Dylan is by far the favorite though
The Mamas and Papas, in a way, mark the in-between point of folk rock and psychedelia. They are a little of each, with more than a dash of straight-ahead pop thrown in.
The first HP Lovecraft album was a folk rock masterpiece (the 2nd was a psychedelic masterpiece--they're available on one CD these days).

Sufjan Stevens' "Michigan" album is wonderful, he says he'll make one album for each of America's states, let's hope they're all this good He sounds a bit Sparklehorse-ish...
And The Decemberists sound also very nice
