I agree with Satch on all the albums he mentioned. All of them are remarkable. My favourite is Veedon Fleece. I'd like to add, once you've already given all the others a fair play (a Veedon Fleece reference there...) listen to Common One, perhaps Van's most musically ambitious and spiritual album after Astral Weeks. I love this album and I consider it an indispensable unit in my entire collection.
At any time, listen to The Philosopher's Stone, a double-disc of unreleased tracks and unreleased versions of tracks from the 70s and 80s. Excellent collection of music. Some of the tunes on here I feel should have been the official release versions ('Wonderful Remark' and 'Flamingoes Fly' most notably) and other songs simply should not have been left in the vault for so long (especially 'Really Don't Know' and 'Stepping Out Queen, part II; also Van was finally allowed to release 'Crazy Jane on God' for this compilation).
