For some weird reason, I liked the music from O Brother Where Art Thou

The music for LoTR, is good.. and I agree on the Matrix as well..
If you're into hip spanish sounding guitar, check out "Nyah" and "Nyah and Ethan" by Flamenco Hans Zimmer from the MI2 soundtrack.

For me personally, the first soundtrack album that comes to mind is one named, "Lost Highway" by David Lynch. very interesting...
